The elegance and simplicity of the place contrast completely with the opulence of the tastes and the sophistication of the dishes that we tasted. If wisdom is the purpose of this gourmet restaurant, it only concerns their vision of the kitchen, the choice of food, the balance of flavors and the desire to use almost all the product to limit waste.
“Each ingredient has a place and a purpose at Cookoovaya. We meticulously source our ingredients so that they are of the highest quality possible. We apply the rule “buy less – buy better” and we do our best to use the ingredients”, according to the chef Periklis Koskina.
Free from any perplexity, it is his ability to transform an ordinary ingredient into an extraordinary one that makes him such an influential chef, “Greece is an inexhaustible source of inspiration”, he adds. We particularly remember the “Slowly cooked beef cheeks with smoked eggplants purée and potato chips”. Simple, traditional… unforgettable.
